A spike is an increase of 30mg/dL (or 1.7mmol/L) compared to your pre-meal glucose.
For example, if your pre-meal glucose is at 90mg/dL (5mmol/L), then a spike would be considered as an increase to more than 120mg/dL (6.7mmol/L) about 2 hours after your meal.
